Cemu is just a much better experience in every department (especially performance) this is due to the fact that cemu has been around much longer so the emulation and experience has had much longer to improve. There are 2 that I can think of:
Dolphi is for Gamecube and Wii. Cemu is for Wii U. Yuzu is for Switch. You'll run everything great no issues at 1080p/60fps etc. outside of limitations with the emulators themselves. For Cemu use triple core recompiler and FPS++. You should be able to play either fine. Cemu is only two years older than Yuzu, and its development has slowed down significantly in the last two years - mostly because nobody cares about the Wii U besides playing BotW. On Ryujinx be it at native or 4K, I get constant stuttering to the point is unplayable. Another more recent example was AI SONMIUM in which Ryujinx has long freezes during transitions, while Yuzu runs smoothly.Although Yuzu has come a LONG way in the past few months and probably for back-to-back BOTW and TOTK it's fine to use Yuzu for both now. BotW runs about 40% faster in Cemu. it's also a lot more stable and almost completely bug-free. I get 50-60fps in Yuzu, and 90-100fps in Cemu on my 5600X. That’s nonsense.

FWIW, I played the entire game in CEMU at 3440x1440 with 60 FPS and it was glorious, but I also hate abandoning a save in game like tnis so I understand your dilemma! I thought so too a year ago, but given current progress on Yuzu and Ryujinx I'm not sure anymore. Maybe not day 1 but it could well be possible month 1.
